Ingredients
Strawberry Milk:
- 2 cups diced fresh strawberries
- 2 tbsp cane sugar or brown sugar
- 1 tbsp water
- 1 ½ - 2 cups soy milk or milk of choice
- Ice cubes
Homemade Strawberry Boba:
- ⅓ cup (70ml) strawberry puree (about 5-6 whole strawberries)
- 2 tbsp cane sugar
- ¾ cup + 2 tbsp (110g) tapioca starch, divided
- ¼ cup liquid sweetener (maple syrup, agave nectar, brown sugar syrup)
- Or Store Bought Brown Sugar Boba Pearls as per this recipe
Optional Green Tea:
- 2 green tea bags, such as Jasmine Tea
- 8 oz hot water
Instructions
Prepare the Strawberries for the Milk:
- Combine the 2 cups diced strawberries, sugar, and water in a saucepan and simmer for 5-6 minutes.
- Mash the strawberries with a fork or blend in a blender. Chill in the fridge until ready to serve.
Prepare the Green Tea (Optional):
- Steep the tea bags in 8 oz hot water for 3-5 minutes. Allow the tea to cool completely in the fridge for the best results.
Prepare the Homemade Strawberry Boba:
NOTE: you can also use store-bought boba and follow this recipe.
- Blend 5-6 large strawberries and strain the puree through a fine sieve.
- In a small pot, combine this strawberry puree and sugar and heat on medium-low. Once simmering, stir in half the tapioca starch. Mix together to form a paste.
- Remove from heat when the mixture clumps together. Then, add the remaining tapioca starch and mix. When no more starch can be incorporated, transfer to a work surface.
- Knead the dough on a clean surface until smooth (cover when not in use).
- Divide dough into 4 sections. Roll each into a log and cut into small pieces (about 0.5-1g each). Roll each piece into a small ball and dust with extra starch. Remove excess starch using a sieve.
- Bring a pot of water to a boil and simmer the pearls for 15 minutes. Remove from the heat, and allow to sit in hot water for 5 additional minutes.
- Rinse pearls under cold water and immerse in your chosen liquid sweetener to prevent sticking.
Prepare the Strawberry Milk Tea:
- (Optional) For a smooth texture, combine the strawberry puree (from the first step) and milk in a blender. Add ½ cup of the cooled tea, if using, and blend until smooth.
- If preferred, strain the mixture for a smoother texture, discarding the pulp.
Assemble the Bubble Tea:
- Spoon 3-4 tbsp of prepared boba into a glass, add the strawberry puree (if you choose not to blend it with the milk), then a handful of ice, and pour the strawberry milk tea on top. Serve with a large bubble tea straw.
